Holland America Line Debuts ‘James Suckling’s Guide to Great Wines’ List

Posted By : Courtney Anderson/ 353 0

New wine list created by the cruise line’s wine curator offers an exceptional selection of champagnes, rosés, reds and whites

SEATTLE, March 27, 2019 /PRNewswire/ — Holland America Line is debuting a sophisticated new wine list created in collaboration with James Suckling, the premium cruise line’s wine curator and one of the world’s most acclaimed wine critics. “James Suckling’s Guide to Great Wines” will be available fleetwide by early spring.

Designed to help a wine novice make a selection that pleases their palate, the list presents wine aficionados with a range of cellar-worthy gems. All of the “JS 90+” wines by the glass and all of the bottle options were hand-selected by Suckling and consistently received a rating of at least a 90, which is “outstanding” on his 100-point rating scale. The list also features wines by the glass that are Holland America Line favorites and some of the most popular wines at sea.

“As we crafted our new wine list with James, our goal was to make it accessible for everyone, no matter their wine knowledge, but we also wanted it to have a selection that was unmatched anywhere at sea,” said Orlando Ashford, Holland America Line’s president. “The idea behind having such an exceptional collection on board is to give our guests the opportunity to try wines they might not know, experiment with different types of wines, and, for those who are new to wine, ease into it with guidance from one of the foremost experts in the world. James’ wine list is like having him at the table helping choose the perfect wine just for you.”

The exclusive list features a diverse range of champagnes, rosés, reds and whites, chosen by Suckling to perfectly pair with any meal or occasion. In addition to the Dining Room, guests will find the list as part of an expanded wine menu in Canaletto, Pinnacle Grill, Tamarind and Rudi’s Sel de Mer, specialty dining venues featured on Holland America Line ships.

“James Suckling’s Guide to Great Wines” is organized by categories to enhance the guest wine drinking experience, such as Light Conversation, Mealtime Favorites and James’s Rock Star Wines, instead of traditional ways such as provenance, vintage or price. Suckling provides further guidance with wines listed in categories such as “easy, fun and delicious,” “thoughtful, reflective and rich,” “versatile with any food,” “fresh, light and fruity,” “medium body, balanced and focused” and “bold, flavorful and characterful.”

I created the wine list to be fun and experiential for guests on Holland American Line,” says Suckling, who rated more than 22,000 wines last year with his team at JamesSuckling.com and more than 200,000 wines in his three-decade career as a wine critic.

The list features selections at all price points, and the James’s Rock Star Wines section offers 21 of the best wines in the world, all having received at least 94 points, considered at the upper level of “outstanding” and “truly great” (95 and above). Guests looking to experience an elite collection that received a perfect 100 points from Suckling can indulge in a bottle of Louis Roederer Cristal Brut frm Champagne, France; Vega Sicilia Unico from Ribera del Duero, Spain; Seña Red Blend Biodynamic from Aconcagua, Chile; and Chateau d’Yquem from Sauternes, France.

About James Suckling

Suckling began his wine critic career in 1981 as an assistant editor for Wine Spectator magazine. Four years later he moved to Paris, France, to establish Wine Spectator’s European bureau. This put him at the center of European wine production and cemented his relationships with thousands of vintners, as well as contributed to his expanding knowledge of wines throughout the continent. In total, Suckling spent nearly 30 years as senior editor and European bureau chief of Wine Spectator and as European editor of Cigar Aficionado.

In 2010 Suckling launched JamesSuckling.com, a site that evolved from seeing a need for wine information to be communicated in a more modern way. Suckling and his team of critics rate about 22,000 wines a year, and Suckling estimates that he’s tasted close to 200,000 wines in his career. Jerk Turkey Burgers

Recipe: Jamaican Jerk Turkey Burger with Pineapple Salsa

Posted By : Courtney Anderson/ 383 0

Enjoy a taste of Jamaica with this Turkey Burger recipe from our friends at Carnival Cruise Line.

Somebody once said that no burger is an island — or something like that — but this burger tastes a lot like one. Grill up this savory, sweet taste of Jamaica for a little flavor vacation tonight… all from easy ingredients you can grab on your way home!

INGREDIENTS:
1 lb ground turkey
1½ cups diced pineapple
½ medium red onion, diced
1 lime, zested and juiced
¼ cup cilantro, chopped
1 tbsp Jamaican jerk seasoning
salt and pepper to taste
whole wheat buns
sliced red onion
lettuce
coconut oil, as needed

TIME TO MAKE THOSE T-BURGERS:
1) Combine the ground turkey and jerk seasoning, mixing just until combined. Be careful not to over-mix, or the meat can become tough.

2) Divide the turkey into four portions and shape into patties. Season with salt and pepper.

3) Are you cooking the burgers on a grill? Lay a sheet of aluminum foil greased with coconut oil over the grill grates (in case the burgers crumble a little). Place the burgers onto the foil and cook over high heat until golden brown on one side. Flip the burgers, cook until browned on the other side. Reduce the heat to medium and close the grill cover, cooking until the meat is fully cooked through and no longer pink.

4) Are you cooking the burgers in a pan? Heat a thin layer of coconut oil in a large skillet over high heat. Add the burgers and cook until golden brown on one side. Flip the burgers, cook until browned on the other side. Reduce the heat to medium, cover the pan, and cook 5–6 more minutes, until the meat is fully cooked through and no longer pink.

5) Fancy bonus! In a bowl, combine the pineapple, bell pepper, red onion, lime zest and juice, and cilantro. You’ve got salsa — throw it on top.

Hidden Spots for Me Time On The World’s Largest Cruise Ship

Posted By : Courtney Anderson/ 366 0

Some people think bigger is better, and others would disagree. The feeling that a big ship just has too much to do and too many people is definitely something we are questioned about all the time, even by seasoned cruisers.

Royal Caribbean has put together this blog “Five Hidden Spots for Me time on Symphony of the Seas” to help you find moments for yourself.
Whether you’re vacationing with your family, a group of friends or a partner, traveling with others doesn’t mean you can’t sneak away for some alone time. True, Royal Caribbean ships are filled with tons of experiences for everyone to enjoy together—from the tallest slide at sea to the first time zero gravity is simulated on stage—and the beauty is that you also have opportunities to chill on your own, too. Here, we’re highlighting some of our favorite ways to catch some down time on board Symphony of the Seas, where you can feel as though you have the whole ship to yourself:

The Solarium
For some of the best views at sea, make your way to the adults-only Solarium, our indoor-outdoor lounge and pool area at the front of most Royal Caribbean ships. With chairs for lounging, a jacuzzi and, on Symphony of the Seas, a beautiful sculpture that sets the area aglow at night, this retreat on deck 15 is one of the most peaceful places on board.

Vitality Spa
Offering deep-tissue massages, acupuncture, facials and more, there’s a reason we refer to Vitality Spa, located on deck six, as a sanctuary at sea. After your treatment, you can refuel with healthy wraps, fresh fruit and made-to-order smoothies at Vitality Café. To really wind down, consider treating yourself to an unlimited day pass for the thermal spa, which boasts a steam room, sauna, rainforest showers and hot stone chairs.

Pro tip: You can reserve spa services at a special rate on days your ship is in port visiting a destination. And speaking of days in port, Vitality Spa’s adjacent fitness center is virtually empty when the ship is docked and early mornings. If exercising while on vacation is your thing, this is another great place to score some alone time!

Central Park
Situated in the middle of deck eight, Central Park is a standout spot on Royal Caribbean’s Oasis Class ships: Our signature, al fresco neighborhood has a lush garden with more than 20,000 live plants, winding pathways and even live music at times, not to mention, the space is home to some of the most popular restaurants on board—including Jamie’s Italian and Chops Grille. The area is most quiet just after lunch and dinner: Grab a bench and chill out with a book or your tablet and a glass of wine from Vintages, among the blooming birds-of-paradise (there are several seating areas tucked away, too).

The Jogging Track
The jogging track in the middle of the ship might slip your mind if you’re not actively looking for a place to power walk or run, but even for the fitness-averse, it’s such a pleasant place. Symphony‘s track is covered, and runs the perimeter of the ship, making it a less frequented area. With deck chairs placed next to the track, you can comfortably take in the stellar view from the wake undisturbed day or night.

Your Stateroom or Suite Balcony
If you’re seeking your own private stretch of ocean and epic views of ports, or want to take in the energy of Central Park, the Boardwalk or the open-air AquaTheater, everyone can appreciate the personal outdoor space that comes with the more than 1,800 balcony stateroom or suites on board Symphony. Treat yourself to room service as you watch the sunset or even take a nap—it’s your very own oasis.

Be the “King of the World”
Finally, if you’ve always longed for a “King of the World” moment, Symphony of the Seas (and Harmony of the Seas) can provide that, too. This somewhat-secret observation deck is near the Solarium (so high up), extends over the edge of the ship and is complete with a glass floor that’ll make you feel like you’re flying over the ocean.

Chicken Trinidad with Orange Rum Sauce

Recipe: Chicken Trinidad with Orange Rum Sauce

Posted By : Courtney Anderson/ 413 0

The fresh, tropical flavors of Caribbean regional cuisine are a lively delight, and this delicious recipe is no exception. A splash of rum is often found in traditional Caribbean recipes, and this sweet, creamy orange rum sauce is the perfect complement to the lightly spiced, coconut-dipped rounds of chicken breast mixed with almonds and apple.

Ingredients
CHICKEN:
4 6-oz (170-g) chicken breasts, boneless
2 T (30 ml) Angostura bitters
Salt and freshly ground black pepper
1 lg apple, peeled and finely diced
¾ C (129 g) almonds, chopped
Canola or vegetable oil for frying
1 C (125 g) flour
3 lg eggs, beaten
1 C (75 g) grated unsweetened coconut

SAUCE:
2 C (473 ml) orange juice
2 oz (57 ml) rum
⅔ C (173 g) cold unsalted butter, cut into small pieces
4 T (59 ml) heavy cream

GARNISH:
Crushed red pepper flakes, to taste
Chopped parsley, to taste

Directions
Preheat oven to 350°F (177°C).

Place the breasts between sheets of plastic wrap and pound with a mallet until very flat; remove plastic wrap. Using a pastry brush, brush breasts with bitters and sprinkle with salt and pepper. Spread apple and almonds over the breasts and roll up, securing ends with toothpicks.

Heat 3 inches of oil in a large deep saucepan. Place saucepan over medium heat until oil reaches 350°F (177°C).

Meanwhile, place flour on a plate, eggs in a shallow bowl and coconut on a plate. Dip each breast in flour, shaking to remove excess. Dip in egg, then roll in coconut. Using tongs, lower chicken into oil and fry, 2 pieces at a time, until golden brown, about 4 minutes. Transfer to a baking sheet and place in the oven to finishing cooking, about 17 minutes. Remove from heat and cover to keep warm.

To make the sauce, place orange juice in a deep saucepan and bring to a simmer over medium heat, adjusting so that orange juice doesn’t boil over. Let cook until reduced by half, about 10 minutes. Add rum and cook for 5 minutes. Remove from heat and whisk in the butter a little at a time. Stir in heavy cream.

To serve, pour a little sauce on plates. Slice the breasts diagonally and place on top of sauce. Garnish with red pepper flakes or parsley and serve immediately.

Prep time: 10 minutes  Cook time: 10 minutes  Makes 4 large or 8 small servings.
