Recipe: Traditional English Summer Pudding

A seasonal dessert made with sliced bread and summer fruit, this English classic dates back to Victorian times. Summer pudding highlights the fresh flavors of plump, juicy berries, while crisp, delicate phyllo, crunchy pistachios and heavenly whipped cream complete this British favorite. Ingredients

SUMMER PUDDING:
¼ loaf brioche, crust removed
⅓ C (75 ml) water
½ tsp (1½ g) pectin
2½ T (30 g) sugar
½ C (60 g) strawberries, diced
½ C (60 g) raspberries
½ C (60 g) blueberries
½ C (60 g) blackberries
½ C (80 g) figs, diced
1 sheet gelatin

PHYLLO CRISP:
¼ sheet phyllo dough
1 T (15 g) unsalted butter, melted

BERRY COMPOTE:
1 T (20 g) strawberry jam
2 strawberries, diced
2 T (25 g) blueberries

GARNISH:
½ C (50 g) whipped cream
1 fig, cut in 5 wedges
2 T (30 ml) raspberry sauce
2 T (15 g) dried cranberries
1 T (10 g) pistachios, coarsely chopped
2 T (15 g) confectioners’ sugar
5 sprigs fresh mint


Directions

Summer Pudding: Slice brioche and cut with a 3-inch circle cutter; place inside 3-inch ramekins. Combine water, pectin and sugar, add strawberries, raspberries, blueberries, blackberries and figs; heat gently just until juice releases from berries. Remove from heat, strain over bowl. Dissolve gelatin in liquid, combine berry and gelatin mixture, spoon into ramekins and chill 1 hour. Reserve leftover berry mixture for compote.

Phyllo Crisp: Preheat oven to 350°F (170°C). Brush phyllo with butter, bake 12-15 minutes. Break into pieces.

Berry Compote: Combine reserved berry mixture, strawberry jam, strawberries and blueberries.

Serving Suggestion
Remove pudding from ramekins, place on plates. Add whipped cream rosettes, fig wedges, raspberry sauce, cranberries, pistachios and compote. Dust with confectioners’ sugar; garnish with mint.

Then a two hour hike of 2.4 miles (3.8 km) ascending 1,100 ft (330 m) will find you standing atop Pulpit Rock and taking in the spectacular view of Lysefjord and the surrounding mountains. Why We Can’t Wait for Regent’s Seven Seas Splendor

When the Seven Seas Explorer debuted in 2016, it was christened “the most luxurious ship ever built.” Now, Seven Seas Splendor, its highly anticipated sister ship, aims to take everything that works about Explorer and dial in the luxury even more. Is that possible? Here are six reasons we’re looking forward to Splendor’s debut next February.

1. There’ll be more Explorer-style cruising to go around.

When Joan Novack boarded Seven Seas Explorer for its preinaugural sailing three years ago, the Virtuoso travel advisor was blown away. “As I walked onto the ship, the most magnificent lobby surrounded me,” she says. “From that point on, I was in awe of how beautiful this ship is. The amenities are lavish in the suites, the dining venues, the spa, and all the public rooms.” A longtime fan of Regent Seven Seas Cruises, Novack has since enjoyed three – soon to be four – additional voyages on her favorite ship. “Until someone builds something to top it, Explorer truly is the most luxurious ship ever built,” she says. And that someone, she adds, “will probably be Regent, with the Splendor.”

2. When Regent strives, opulence wins.

Regent Seven Seas Cruises president and CEO Jason Montague described the approach to creating Splendor as “obsessing over large and small details.” Those large details likely include the 46,000 square feet (we’re talking more than an acre) of Italian marble that will adorn Splendor’s interior – including the posh bathrooms in the 375 suites. As for those small things, look for specially commissioned original artwork throughout the ship and thoughtful touches such as lined jewelry drawers and designated spaces for designer handbags in the Penthouse Suite.

Like Explorer, the 750-guest Seven Seas Splendor will offer the maximum space and an emphasis on service, boasting one of the highest space ratios and lowest guest-to-crew ratios among cruise lines. Guests will also have plenty of room to stretch out in the fresh air, thanks to nearly 52,000 square feet (larger than a football field) of balcony space.

3. Regent Suite shatters records in a big way.

Palatial doesn’t begin to describe the Regent Suite, the largest suite ever constructed on a luxury cruise ship. Commanding the 14th deck, above the bridge and overlooking the bow, this splurge-worthy accommodation offers more than 3,000 square feet of interior space and a 1,300-square-foot wraparound veranda, complete with a hot tub on the forward balcony. (This is where you’ll catch those gorgeous sunsets, a glass of Veuve Clicquot in hand.)

Expect sweet dreams while sleeping on the custom, handcrafted, $200,000 Vividus bed; the king-size mattress took over 18 months to complete to Regent Seven Seas Cruises’ exacting standards. Splendor’s Regent Suite boasts a master bath and spa 30 percent larger than its predecessor on the Explorer in order to incorporate a floor-to-ceiling ocean-view shower.

“The Regent Suite, for those lucky enough to experience it, is over the top,” Novack says. “Guests never have to leave, as meals and spa services are available in their plush surroundings at all times. This suite even comes with a private car and driver in every port on the sailing.”

Ready to indulge? Don’t hesitate. The Regent Suite is already sold out for nearly all of Seven Seas Splendor’s 2020 inaugural season sailings.

4. The captain, too, is breaking records.

Someone we can’t wait to meet: Captain Serena Melani. The first woman in cruise history to captain a new cruise ship at launch, she’ll helm Seven Seas Splendor when it debuts next year. Melani joined the cruise line in 2010 and has led Seven Seas Explorer, Seven Seas Mariner, and Seven Seas Navigator since becoming the company’s first female master captain in 2016. “Captain Melani has distinguished herself as a trailblazer in the maritime and cruise industries,” Montague says. “She is an international role model and admired by our guests and crew.”

5. Regent’s all-inclusive amenities are still around and still awesome.

(January 28, 2019) – Princess Cruises, a pioneer in building cruise ships specifically designed to include an array of the most sought-after shipboard features – the private balcony – continues to innovate by introducing the cruise industry’s largest balconies at sea, available when sailing in the Sky Suites onboard the new Sky Princess, launching in October 2019.

Two Sky Suites accommodations available now for booking onboard Sky Princess, as well as the cruise line’s next new ship, Enchanted Princess, are centrally located on the top decks – the apex of the ship and feature the largest private balconies ever offered by any cruise line. Celebrity Cruises announces season of firsts with 2020 Europe sailings visiting more ports than ever

Celebrity Cruises’ 2020 Europe season will be the brand’s most “revolutionary” yet, marking the inaugural season of Celebrity Apex, the newest addition to Celebrity’s fleet and the second ship in the innovative Edge Series. The luxurious Celebrity Apex will make her debut in April 2020 from Southampton, England. Like her industry-changing sister ship, Celebrity Edge, Celebrity Apex will feature an innovative outward-facing design and transformational accommodations that invite guests to take in the breathtaking world around them.

In total, Celebrity’s 2020 European season will feature six award-winning ships, two of which will have been reimagined as part of THE CELEBRITY REVOLUTION, an ambitious $500-million-dollar revitalization program that will introduce breathtakingly redesigned accommodations, reimagined spaces, and state-of-the-art experiences across the brand’s fleet. Many people believe that travel is not just about adding stamps to ones passport but about making your stamp on the country you are visiting. Voluntourism is one way to achieve this. In 2011, Crystal Cruises debuted their “You Care. We Care” program, allowing their luxury cruise guests a way to connect with a destination by offering excursions with local organizations building goodwill and relationships.

In 2019 they are continuing this tremendously popular program by unveiling more than two dozen complimentary voluntourism experiences on most Crystal Symphony and Serenity sailings, along with select itineries on the Crystal Esprit visiting the West Indies. The criteria for selecting the activities that are part of the experience on each “You Care. We Care.” adventure involve identifying those where participants can make an immediate positive impact. The organizations determine their greatest needs and then the Crystal team works closely with them on how they would like Crystal to be involved.

The contribution of guests and crew is that of time and care, with no financial obligations requested or required. Crystal also provides financial and other needed resources annually to many of the charities visited during “You Care. We Care.” adventures further benefiting the programs and the people they serve.

 

For 2019, Crystal guests and crew can contribute to communities around the world with the following “You Care. We Care.” voluntourism excursions including:
  • Assisting at the San Francisco Food Bank, Clatsop Community Action Food Bank in Astoria, Oregon and Mustard Seed Food Bank in Victoria, British Columbia
  • Playing games, reading, dancing and participating in an array of other activities with the elderly and children at the Granitos de Paz Foundation in Cartagena, Colombia
  • Helping to feed the elderly at Mercy Kitchen in Belize
  • Assisting with cleaning and caring for the animals at the Samui Animal Shelter in Koh Samui, Thailand
  • Getting an up-close look at the wildlife at Territory Wildlife Park and joining the conservation team in maintaining the park’s botanical gardens in Darwin, Australia
  • Participating in tree planting conservation efforts to shelter the yellow-eyed penguins of Dunedin, New Zealand
  • Assisting with gardening and other household duties at Domus Christi Home for the Elderly in Dubrovnik, Croatia
  • Assisting with meal preparation or recreational activities at Smile of a Child in Cornith, Greece
  • Helping prepare food and create ceramic artwork with the disabled at the Pio Monte della Misericordia in Sorrento, Italy
  • Learning about the conservation of marine life and participating in the theoretical rescue of a dolphin at the Rehabilitation Center of Prat de Llobregat in Barcelona, Spain
  • Assisting with the work at the Gallinas & Focas home for the mentally challenged, tending gardens and olive groves in Palma de Mallorca, Spain
  • Assisting with groundskeeping at the historic Mount Stewart House & Gardens in Belfast, U.K.
  • Planting trees at the Heidmork Natural Reserve in Reykjavik, Iceland

Princess Cruises implements changes to Traditional Dining Times … here is why!

Based on guest feedback, Princess Cruises took a look at their Traditional Dining Times and found that the vast majority of cruisers were asking for earlier dining times on most cruise destination other than Europe and South America.

Princess has adjusted these times to accommodate passengers needs while dining in their Traditional Dining room only and they have no doubt this will create the best possible experience for sailing guests.

NEW Traditional Dining times are:
– First Seating will now be at 5:00 pm
– Second Seating will now be at 7:15 pm

Princess Cruises Anytime Dining will continue to take diners from 5:00 pm onwards.

Each ship will retain the flexibility to adjust dining time as needed, based on the destination, season and passenger needs.

You will be able to access any changes to your upcoming cruise through the Cruise Personalizer.
