Over the years as we have traveled and explored the markets of the Baltic and Scandinavia, our chefs have developed a love of earthy Nordic food, ingredients, techniques, and traditions. One of our most popular chefs, Karlis Celms, came to us from Riga, Latvia as our local chef host leading our Culinary Discovery Tour through the Riga market.

This excursion, Chef’s Market Tour & Latvian Cooking Lesson, takes you on an insider’s tour of Europe’s largest market and bazaar, Riga Central Market. You have the chance to taste local specialties such as smoked herring, local cheeses, traditional rye breads, and regional sweet treats — plus we shop for ingredients for your cooking class. You’ll have ample time to take in the unique atmosphere and architecture of this bustling UNESCO World Heritage site. You also get a great panoramic tour of Riga as we travel to and from the market – keep an eye out for the famed Art Nouveau Street, where you can really get a good look at the stunning architecture of this city.

Back on board at The Culinary Center, we dive into a true farm-to-table cooking experience as we prepare traditional dishes such as Latvian meatballs in a cream gravy and root potato mash as well as seasonal berries made into a chutney or perhaps spring mushrooms for a duxelle tart. It all depends on what we find in the market! We top it all off with a delicious lunch paired with artisanal beers we specially select – a true celebration of all that makes Nordic cuisine so special.

So start planning your next culinary adventure with us and cook up a Nordic feast with this delicious fish soup – one of my favorites from Latvia’s neighboring country, Estonia.

ESTONIAN CREAMY FISH SOUP
Serves 4

  • 3 tablespoons butter
  • 1 cup finely diced onion
  • 1 tablespoon ground allspice
  • 2 bay leaves
  • 2 sprigs thyme
  • 4 cups low-sodium chicken stock, cold
  • 1 cup heavy cream 2 cups 1-inch red new potato cubes
  • ½ pound salmon fillet, cut into 1-inch cubes
  • ½ pound halibut fillet, cut into 1-inch cubes
  • 1 to 2 teaspoons fish sauce
  • Coarsely ground white and pink peppercorns, to taste
  • 2 tablespoons each chopped fresh dill and chopped chives

In a large saucepan over medium heat, melt the butter and sweat the onions with the allspice, bay leaves, and thyme until onions soften and aromas bloom, about 6 minutes. Add the cold stock, cream and potatoes and simmer until potatoes are al dente, about 10 minutes. Add the fish and continue to simmer until the fish is cooked, about 5 minutes. Taste and add fish sauce and cracked pepper to season.

Serve in warmed bowls and garnish with dill and chives – and enjoy!

I’ve cruised many times before never with Celebrity Cruises so I jumped at the chance to be part of a Travel Advisor opportunity to spend a few days on their newest ship, the Celebrity Edge. She is a beautiful ship with many many great things for everyone to enjoy, but I just picked 3 Things I liked best about this ship!

THE SPA
This is a wonderful wellness spa, with many options beyond the typical aesthetic services such as Salt therapy rooms, a Crystalarium, Float Room, Turkish baths and a steam room and sauna.

 

THE INCLUDED RESTAURANTS
We were in Aqua Class so we had access to Blu. LOVED Blu. Great food. Great service. Lovely setting. Comfortable chairs. If something wasn’t on the menu, they would get it for me.

I liked that some of the other included restaurants were smaller venues. Gave it a more intimate atmosphere, quiet instead of the huge, noisy two level dining experience you get on some ships.

 

SPACES
I loved the design and connection of sea with land onboard. Lots of greenery and wood all around, very calming and not overwhelming to the eyes. Plenty of comfortable spots scattered throughout to relax or people watch (one of my favourite things to do!)

A New Twist On Great Ships

I recently had the pleasure of spending a few days on Norwegian Bliss and wanted to share 5 thoughts.

Food/Restaurants

I did not have a chance to eat in all the restaurants but overall enjoyed the food experience. I am always a big fan of a pub on a ship.  The Local did not disappoint.  Good beer selection and some tasty pub grub. Food Republic was very cool – always a fan of shareables! We also ate at Tappenyaki one night and it was a lot of fun as was to be expected with a great show.

 

Go Carts

The Go Cart experience was far superior to my expectations.  The process to get started was smooth and the track was longer and more adventurous than I anticipated.  Most impressive was the speed and handling of the go carts themselves.  I was able to move at a good pace and take corners hard.  I really thought that it would be a very basic experience and it was truly thrilling.

 

Décor

The décor of the ship was great.  Modern and crisp with soothing palettes. One thing I am impressed with is that NCL seems to improve their decor with every ship – they don’t just keep it the same.

 

Entertainment

I am always impressed with a professional production of Jersey Boys – the story is great; the music is fantastic – and it was no different on the Bliss. We took in a comedy routine at the Social Comedy and Night Club and both the host and the comedian were very entertaining – a nice way to laugh off feeling full after dinner!

 

Observation Lounge

This may have been the most impressive space on the ship. Primarily because it was a major upgrade from previous Escape class ships.  It was well designed, extremely inviting and I was very impressed with the small food stations they had that allowed you to grab a snack or light lunch during the day.

New wine list created by the cruise line’s wine curator offers an exceptional selection of champagnes, rosés, reds and whites

SEATTLE, March 27, 2019 /PRNewswire/ — Holland America Line is debuting a sophisticated new wine list created in collaboration with James Suckling, the premium cruise line’s wine curator and one of the world’s most acclaimed wine critics. “James Suckling’s Guide to Great Wines” will be available fleetwide by early spring.

Designed to help a wine novice make a selection that pleases their palate, the list presents wine aficionados with a range of cellar-worthy gems. All of the “JS 90+” wines by the glass and all of the bottle options were hand-selected by Suckling and consistently received a rating of at least a 90, which is “outstanding” on his 100-point rating scale. The list also features wines by the glass that are Holland America Line favorites and some of the most popular wines at sea.

“As we crafted our new wine list with James, our goal was to make it accessible for everyone, no matter their wine knowledge, but we also wanted it to have a selection that was unmatched anywhere at sea,” said Orlando Ashford, Holland America Line’s president. “The idea behind having such an exceptional collection on board is to give our guests the opportunity to try wines they might not know, experiment with different types of wines, and, for those who are new to wine, ease into it with guidance from one of the foremost experts in the world. James’ wine list is like having him at the table helping choose the perfect wine just for you.”

The exclusive list features a diverse range of champagnes, rosés, reds and whites, chosen by Suckling to perfectly pair with any meal or occasion. In addition to the Dining Room, guests will find the list as part of an expanded wine menu in Canaletto, Pinnacle Grill, Tamarind and Rudi’s Sel de Mer, specialty dining venues featured on Holland America Line ships.

“James Suckling’s Guide to Great Wines” is organized by categories to enhance the guest wine drinking experience, such as Light Conversation, Mealtime Favorites and James’s Rock Star Wines, instead of traditional ways such as provenance, vintage or price. Suckling provides further guidance with wines listed in categories such as “easy, fun and delicious,” “thoughtful, reflective and rich,” “versatile with any food,” “fresh, light and fruity,” “medium body, balanced and focused” and “bold, flavorful and characterful.”

I created the wine list to be fun and experiential for guests on Holland American Line,” says Suckling, who rated more than 22,000 wines last year with his team at JamesSuckling.com and more than 200,000 wines in his three-decade career as a wine critic.

The list features selections at all price points, and the James’s Rock Star Wines section offers 21 of the best wines in the world, all having received at least 94 points, considered at the upper level of “outstanding” and “truly great” (95 and above). Guests looking to experience an elite collection that received a perfect 100 points from Suckling can indulge in a bottle of Louis Roederer Cristal Brut frm Champagne, France; Vega Sicilia Unico from Ribera del Duero, Spain; Seña Red Blend Biodynamic from Aconcagua, Chile; and Chateau d’Yquem from Sauternes, France.

Norwegian Cruise Line Unveils Photos of Norwegian Sky’s 2019 Bow-To-Stern Renovation Featuring New Bar and Dining Venue, Pinnacle Lounge and Sushi Bar, Introduced to Norwegian Fleet

 

Following a three-week dry dock in Freeport, Bahamas, Norwegian Sky recently returned to her homeport of Miami showcasing new venues, updated spaces and completely redesigned staterooms and corridors, elevating the experience for guests looking for shorter vacation getaways.

“Last year was an exciting year with the record-breaking launch of Norwegian Bliss, the announcement of Norwegian Joy’s redeployment to the U.S. and the unveiling of four ships which benefited from our comprehensive Norwegian Edge® bow-to-stern refurbishment program,” said Andy Stuart, president and chief executive officer of Norwegian Cruise Line. “We are continuing the momentum and starting 2019 with the reintroduction of Norwegian Sky. She returned home to Miami unveiling new designs and experiences that showcase our dedication to providing guests with meaningful experiences across our fleet.”

All food and beverage outlets were updated, and eight new venues were introduced to Norwegian Sky. These include the pub-style eatery The Local Bar & Grill; La Cucina for classic Italian fare; Sugarcane Mojito Bar; Topsiders, the poolside bar; late night venues, Bliss Ultra Lounge and Spinnaker Lounge; a full-service Starbucks® licensed store; and new to the Norwegian fleet – Pinnacle Lounge and Sushi Bar, which provides guests with a relaxed yet elevated atmosphere to enjoy original and traditional sushi concepts while taking in the endless views of the ocean through floor-to-ceiling windows.

Other upgrades include the complimentary Palace and Crossings Main Dining Rooms, Garden Café and The Great Outdoors; and specialty restaurants Cagney’s and Le Bistro. All bars and lounges on board were also refreshed.

All 1,002 staterooms were upgraded with new televisions and USB outlets, as well as brand new carpet, artwork, furniture, lighting and balcony decking. The ship’s four 835-square-foot Owner’s Suites feature refreshed bathrooms and private hot tubs.

The Atrium, the epicenter of the ship, has been revitalized with an entirely refreshed look including updated flooring, refurbished reception and shore excursion desk areas and the addition of lounge seating. Pool deck enhancements include new flooring and furniture, the installation of additional canopies and an updated beach area.

A year-round resident of PortMiami, Norwegian Sky offers three-and-four-day cruises to the Bahamas, and four-and-five-day cruises to Bahamas and Cuba with an overnight in Havana. She calls to Great Stirrup Cay, the company’s private island, and is one of two ships in the fleet to offer an all-inclusive experience on select sailings.

 

More Pasta Please

I’ve been on a few Princess Cruises and one thing that I always look forward to is my Fettuccine Alfredo.  My first cruise was with a seasoned Princess cruiser and they told me I must try it – so of course I did!  It was delicious!  It came in a crispy parmesan basket, was creamy and buttery and just darn tasty.  So now anytime I sail with Princess I have it at least twice a cruise – it is on their “always available” menu so I know I won’t be disappointed.  My husband started getting it as an appetizer and when I travelled with my extended family our waiter knew to bring us a few bowls to share around the table each night so everyone got to have some.

 

Oh and don’t forget to try the Princess Love Boat Dream for dessert!!!
