Bea Tollman’s culinary career began in the kitchen of her and her husband’s first hotel in Johannesburg, South Africa—The Nugget. What started out as helping prepare starters and desserts turned into a passion for creating recipes that would become staple dishes for their guests. Since then, her traditional home cooking has dazzled guests for decades, becoming a cornerstone of Red Carnation Hotels and Uniworld River Cruises alike.
